Sweet Potato Squash
This squash is naturally sweet. To cook:
Puncture with a fork and bake whole or cut in half.
Place cutside down on baking sheet.
Set oven to 350 degrees for 35-45 minutes.
Or, microwave on High for 6-10 minutes.

Acorn Squash
Cut squash in half, remove seeds and strings.
Place squash skin side up in a pan with about 2 inched of water.
Set in oven and bake 40 minutes or until tender.
Remove and fill each cavity with:
- 1 TB brown sugar
- 1 tsp butter
- salt and pepper to taste
Return to oven for 10 minutes.
Or, microwave on High for 6-10 minutes.

McChesney's Homemade Stuffed Chicken Breasts
Preheat oven to 375 degrees.
Brush top of chicken with soft margarine.
Place on a rack and on a pan.
Cover with foil.
Bake 45 minutes.
Uncover and bake 15-20 minutes more.

McChesney's Homemade Stuffed Pork Chops
Preheat oven to 350 degrees.
Season with salt and pepper.
Place in a pan and cover.
Bake 45 minutes.
Uncover and bake 15-20 minutes more.

Beef Tenderloin
This is an easy method for any size tenderloin.
Preheat oven to 450 degrees.
Let meat stand for 4 hours at room temperature. Season it as desired.
Place in a pan and set into oven.
Cook for 15 minutes.
Reduce temperature to 350 degrees.
Cook for 15 minutes more.
Remove and cover with foil.
Let stand for 15 minutes.
Carve and serve.

Roast Beef Done Medium
Preheat oven to 500 degrees.
Let meat stand for 4 hours at room temperature. Season it as desired.
Place in a pan and set into oven.
Reduce oven temperature to 350 degrees.
Cook uncovered for 15-18 minutes per pound (longer for well done, shorter for rare).
Remove from oven, let stand for 15 minutes.
Carve and serve.

Baked Lamb Racks
Preheat oven to 400 degrees.
Place lamb rack in a pan with rib side up and fat down.
Bake 20 minutes.
Remove from oven. Criss-cross bones French style, fat side up.
Reduce heat to 375 degrees.
Bake 20 minutes longer (total baking time is 40-50 minutes).
Use meat thermometer to check for desired doneness.

McChesney Burgers
Do not defrost patties.
Preheat barbeque grill.
Place frozen patties on grill.
Cook for 6-7 minutes per side.
Produces medium rare burgers.

COOKING INSTRUCTIONS FOR STUFFED HO-KA TURKEYS
 
Weight Hours
8 - 12 lbs 3 to 3 1/2
12 - 14 lbs 3 1/2 to 4
14 - 18 lbs 4 to 4 1/4
18 - 20 lbs 4 1/4 to 4 3/4
20 - 24 lbs 4 3/4 to 5 1/4
24 - 30 lbs 5 1/4 to 6 1/4

 
Roast Ho-Ka Turkeys at 15 minutes per pound. Unstuffed turkeys cook slightly faster. Adjust your cooking time accordingly.

Meat thermometer should read 180 to 185 degrees.

Preheat oven to 325 degrees.
Place turkey breast-side up on a rack in a shallow roasting pan.
Do not add water.
Cover turkey with a loose tent of heavy-duty foil.
Remove foil 20-30 minutes before roasting is done.
When turkey is done, remove stuffing.
Cover bird with foil and let stand for 15 minutes.
Carve and serve.
